PAUL'S RANT - POOR YEAST HANDLING

Sprinkle or rehydrate? We strongly recommend simply sprinkling dry yeast on top of your must. In order to rehydrate your yeast properly, you need to have precisely 10 to 1 water / yeast.  If not enough water is used, the yeast will grow sluggishly.  If too much water is used the yeast cells will burst.

Temperature range is inflexible. If the water isn’t warm enough, the yeast cells won’t soften.   If too warm, the yeast cells will cook and die.

Then, before adding your rehydrated yeast to the primary, the temperature difference between the yeast and your wine or beer kit must be less than 2 degrees Celsius.   Otherwise, weakened cells may die and others may go dormant.

Seems like a lot of trouble, doesn't it?  Just trust the yeast, it  knows its job.  A short lag time isn’t enough to allow any spoilage.  It’s a lot simpler, and why take all that risk?

Patience 

Immediate results are a by-product of today’s fast paced world.  Most people seem to expect it all to happen NOW, and become annoyed if they have to wait for anything.   Even when it comes to wine, I’ve had inquiries about additives and procedures that supposedly speed up the process of home brewing.

Well, I say, if you are in that much of a hurry, just go to the liquor store.  But, to make your own wine or beer requires an investment, not just in a little space in your home, but in time.   

There is a certain sense of pleasure and pride in serving your friends a wine you’ve made that is smooth, mellow and (heaven forbid) not bottled too early.

Years ago my wife and I were into wine making, but when the kids came along we found it too difficult to continue.   I have often referred to those days with my children, and so this past Christmas I received a Vintners Reserve kit as a gift from my son.  Anticipation dictated we make this kit together, so my wife, son and his significant other made and shared the results. The kids were so impressed with the quality of the wine we decided to seriously get into the hobby as a foursome.

THE IMPORTANCE OF UNDERSTANDING PRODUCT CODES! 

The Home Vintner has constant turnover of wine and beer kits, so all of our stock is current and we guarantee them 100 per cent.   When you start your wine or beer, remove the code sticker from the top of the box and stick it to your instructions or in your wine journal.  You need to have the code numbers in order for us to honour this guarantee!

Some other stores appear to have lots of stock but often the product is too old to be at its best.  If the code sticker has been removed, don’t buy the kit.  Check the production date on the box, if it’s under a year chances are it's okay, unless it was displayed in a window.   Direct sunlight will cause a kit to deteriorate within weeks. 

Our customers have learned to trust the Home Vintner; life is too short to drink bad wine.

BARONS - PALE ALE - $4 OFF

One of our most popular beers, Pale Ale is a delightful interpretation of a classic English pale ale.  It has a rich, chestnut color and an exceptionally full-bodied, complex character.  Goldings hops give the Pale Ale its fragrant bouquet and spicy flavor.  It is a flawless beer that opens with bright, perky high notes of maltiness and orange blossom and segues into a delectable hoppiness. 

For IPA lovers we have the ingredients and recipe for our award winning India Pale Ale.  Ask the staff about liquid yeast options.  You can change your IPA into an Innis & Gunn style beer by adding Brandy, Rum, Scotch at bottling time - ask for the recipe the next time you are in.  Use our IPA add on package and use a 19 L carboy to make a West Coast IPA. 

BLACK AND TAN

The Black and Tan originated in English pubs as a mixture of draught Pale Ale and Stout or Porter. Subsequent modifications to the recipe allowed for a mix of Lager and Stout, known as a Half and Half. 

Directions:  Pour 8 oz Pale Ale into a pint glass (pour a good head).  Use a spoon so that the round side is up, then gradually pour the Stout to create the top layer.

 

 

SOME GUIDELINES FOR PAIRING BEER AND CHEESE

Discover more enjoyment with your beer  by pairing it with matching cheese.  Try pairing complex cheeses with complex beers.

• Pair delicate beers with young, fresh cheeses.
• Pair malty beers with nutty, aged cheeses.
• Pair highly hopped, bitter beers with tart, sharp cheeses, especially cheddars.
• Pair strong, sweet beers with blue cheeses.
• Serve cheeses at room temperature - the flavours come out more.
• Contrast flavours and match textures (lighter beer, lighter cheeses.

WORLD VINEYARD ITALIAN SANGIOVESE - $5 OFF

The lively fruit and good acidity make it one of the most food-friendly of all reds, pairing well with pasta, veal Parmigiana, intensely flavoured cheeses, and fruits like cherries, figs, plums and raspberries.

Wonderful plum, spice, currant and wild berry flavors.  The soft tannins of this Bordeaux varietal carry these aromas and flavors to a long lingering finish.

It is opaque and very dark ruby colored.  It opens with a fragrant ripe black cherry bouquet. On the palate, this wine is medium bodied, nicely balanced, and fruit forward.  The flavor profile is a very pleasant blend of black cherry and mild black raspberry.  There is a hint of oak and a touch of black pepper to add to its character.  The finish is dry and its moderate tannins linger quite nicely. This wine is quite versatile and would pair well with many foods.

Sweetness: DRY | Body: MEDIUM | Oak Intensity: LIGHT
